“Made with zero dosage, this ‘brut nature’ is focused, just fruity enough and shows hints of yeasty/autolytic notes. Green apple and citrus blossom scents dominate a nose that also shows a little of that yeastiness. Fresh and bone dry, the palate mimics the nose in its green apple-forward nature, but there’s also lime pulp and zest, more floral notes and great acidity. The yeastiness is there again too, just at the edges, bringing a bit of complexity. The finish is medium-length, dry, fresh and has a subtle green apple Jolly Rancher flavor to it.” -The Cork Report
